BATCH 27 was distributed as follows: Type in BATCH Used vessels Spätburgunder 80% New Oak High Toast 10% New Oak Medium Toast 10% This batch has a light brown, almost beige foam collar with nice bubbles, which disappears quite quickly. This gives the beer optimal odor, with a greater enjoyment. Striking mahogany color, darker than the normal amber brown quadrupel. The aroma is very complex and invokes flavor associations of red wine, sweet caramel, alcohol, dried fruit (dates, plum), honey, vanilla, oak and banana. Tasting new flavors will continue to emerge. This batch has a chic flavor with a lot of oak. The alcohol is well balanced with the sweetness and moderate bitterness of this Quadrupel, with the characteristic Quadrupels flavor in the background. Like the aroma, the taste is also very complex. Batch 27 is characterized by a warm and gentle soothing taste and a nice stimulation of the carbonic acid. In summary, this is a characteristic tasting beer to enjoy.

The following allocation applies to Batch 32: Barrel types In batch Gaillac White Wine 75% New Oak Medium Toast 10% New Oak High Toast 10% New Acacia Medium Toast 5% Batch 32 displays a deep mahogany colour, darker than the normal Quadrupel. The finely pearled froth is a light brown, almost beige-like with small bubbles. The main component of this batch is white wine from the French Gaillac region near Toulouse. Gailliac is known for its still and light sparkling white wines. The grape variety used most often in this very old white wine region are Mauzac, Len de l’el and Muscadelle. These wines have subtle aromas of dried tropical fruit, apple, honey and dates. These aromas and flavours can also be detected in this unique beer. Batch 32 was aged in these casks for more than two years. The flavour can be described as explosive, whereby the tannins of the oak and of vanilla manifest front and centre. The finish is slightly acidic due to the barrels that contained the white wine. The alcohol is well-balanced with the sweetness and the low bitterness of this Quadrupel. To restore the honour to an old tradition, in 2009 The Koningshoeven Brewery started to age La Trappe Quadrupel in oak barrels. This created a unique Trappist ale with a well-balanced taste and a unique oak aroma. The complex taste depends on the type of barrel used for ageing the ale and therefore differs per batch. The ale undergoes secondary fermentation in the bottle, it can be kept for many years and is pure indulgence for the true ale lover. Batch #37: 100% Wood This truly remarkable Oak Aged batch consists of a mixture of oak, acacia and cherry wood barriques with medium and heavy toasting, in which the Quadrupel was allowed to age quietly for up to 2.5 years. Previous La Trappe Quadrupel Oak Aged batches predominantly employed barrels that had been used to age spirits and wines. This time, we decided to use only unused barriques to create a unique signature of several types of European wood. Batch 37 has a beautiful and firm layer of beige foam. Thanks to the long period of wood ageing, the beer has taken on a wonderful dark colour, going way beyond your normal Quadrupel ale. The remarkable combination of wood types used for this batch yields a truly complex, rich and fine fragrance and taste. A beautiful beer with a a very special history, its origins rooted in the Netherlands as well as Italy. Late 2012 we brewed this beer for the first time with Kees Bubberman when he was still a brewer for Emelisse Brewing and we calles it Mikkie = Stout (stout also means naughty in Dutch). During spring 2013, Peter van der Arend (Morebeer Brewing) met the Italian brewer Giovanni Campari (Birrificio del Ducato) at the Gronings Beer Festival. It promised to be the start of a beautiful friendship. Late 2013, Peter flew to Italy with a recipe per Giovanni's request. Peter had asked Kees for approval to use the recipe of Mikkie = Stout. And now that the beer was brewed in Italy, it was renamed to Mikkie = Cattivella, which is Italian for naughty. The years have passed and Giovanni has now sold his brewery. Therefore we had to search for a new brewing partner and location. And now Mikkie = Cattivella has come home. We are brewing this wonderful beer at our friends from Poesiat & Kater, right here in Amsterdam. We already have a history with Poesiat & Kater as we also brew our other housebeer with them, the awardwinning Dutch Eagle!

When Hugo's mother sent us a box of strange fruit, we had to brew with it. Kwiek - Barrel-aged wild gose with absinthe wormwood and angelica. Kwiek proves that history is not dull at all. This collab with DOK Brewing Company is a fresh and tart gose, a beer style brewed with wheat that originated from Goslar and Leipzig. We wanted to know how the early goses were made and discovered that they were often flavoured with absinthe, a herb that we happen to use quite often in our beers. So for this collab we decided to continue the tradition, with absinthe wormwood from the historic garden De Ommuurde Tuin. Modern goses are often spiced with coriander seed, which we've replaced with angelica seed, a native plant that gives fresh, herbal notes. The sourness and long, bitter finish of Kwiek are balanced with a good dose of salt, which is a distinctive ingredient of goses. Bitter is a blend of a saison and mature beer from older barrels. The saison is made with a good amount of hops. The resulting bitterness works well with the complexity of the older beer, that aged for 2,5 up to 4 years in oak barrels. In the nose you will come across vanilla, dusty cellar and some funk, but also a floral quality — think of lavender and chamomile. The more yeasty character of the saison, with a hint of black pepper, complements the more mature and funky characteristics of the older part of the blend. Taste-wise, you’ll find lemon zest, wood, and interesting herbal notes like sage and terragon. Franc is a wild ale with Cabernet Franc and a touch of Kékfrankos red wine grapes. After maceration with the grapes, we aged the beer further for another year and a half on a foeder that previously contained Amarone wine from Veneto, Italy. This rounded out the beer and gave it more complexity and depth. Before bottling we added a small amount of a comparatively younger beer with Kékfrankos grapes, to give the overall blend some freshness. It starts with a delicate aroma of fresh strawberries, cherries and rose petals, followed by the wine notes of the barrel and some funk. In the first moments of tasting the beer you will get jammy red fruits like blackberries, cherries and raspberries, after which fresh plums and roasted bell pepper follow. The barrel gives the beer a rich spicy, almost chocolaty and smoky flavour.

We’ve added Sicilian sage and also wormwood (artemisia absinthium and another secret variety) to the final blend to macerate a week before bottling.
